Heat Wave

It's a whopping 40 degrees out. When I got in my car this afternoon, it was actually hot. Crazy, I know. It's amazing how "warm" it feels compared to what it used to feel like last week. I even took off my coat and ran errands in just my scrubs. Derrick and I were joking last night about whether or not we should take advantage of it and head down to the "beach" on the lake.

Our clubhouse gym is under construction so I took advantage of our beautiful weather and ran outside. I haven't run since last Saturday, when my knee started to hurt. I don't know if it's that, or the fact that I only run indoors on treadmills, but I just about DIED. Running outside is MUCH harder than treadmill running. Maybe it was the fact that my run started out going up a hill, (albeit it a small one). All I know is I am NOT feeling as superhero-ish as I once was when I finished a run. So sad.

Those muffins I made Sunday morning turned out pretty yummy. I only used half the amount of blueberries it called for, because I didn't buy the right size container. So they would be even better with all of them!! I'm pretty sure this is the first time I've ever made muffins from scratch, and even though Derrick says he likes Betty's, I'll still make them again. Oh%, I use a Pampered Chef stoneware muffin pan. LOVE IT. Actually, I do 95% of my baking in stoneware, and I never burn anything. It's fabulous.

Lemon-Blueberry Muffins

2 cups all-purpose flour
1/4 cup plus 2 tablespoons sugar, divided
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon lemon zest
1 cup fresh blueberries, rinsed and drained
3/4 cup butter or margarine, melted
3/4 cup milk
1 egg
1/4 teaspoon ground cinnamon

1. Preheat oven to 400°F. In large bowl, combine flour, 1/4 cup of the sugar, baking powder, salt and lemon zest; mix well. Add blueberries and toss gently.

2. Melt butter in microwave on HIGH 1 minute or until melted. Using pastry brush, lightly brush cups of muffin pan with butter; reserve remaining butter. In small bowl, whisk milk, egg and remaining melted butter. Add milk mixture to dry ingredients; mix just until dry ingredients are moistened (batter will be slightly lumpy). Do not over mix.

3. Divide batter evenly among muffin cups. Combine remaining 2 tablespoons sugar and cinnamon, sprinkle over muffins.

4. Bake 20-25 minutes or until golden brown and toothpick inserted in center comes out clean. Remove to cooling Rack. Cool 5 minutes; remove from pan. Serve warm.

I got a creme brulee set from my mother in law for my birthday, so I'm going to try making it tonite. I've never made it before, but I'm really just excited to use the blowtorch. :)

OK. Unless you live in a cave, you know that Britney shaved her head this weekend. She is seriously off the deep end. I guess she checked herself into rehab today, hopefully for longer than a day like last time. I'm trying really really hard to stay a faithful fan, but she's making it really hard for me. I think for so long she's been in the spotlight, and she's just never had a life of her own. Always at the mercy of the paparazzi, who exploit her each and every move. Basically, her life is not her own. I don't blame her for going ballistic, but where is her family during all of this? Aren't they there for her to tell her she's screwing up? To offer help? I mean, let's face it. At this point, K-Fed is the responsible parent here! A judge would grant him full custody in an instant! I wish her best, and hope she can get herself straightend out. I had high hopes for a full-on Britney comeback, but that dream is getting farther and farther away. I just want Oops! Britney back, is that so much to ask???

I agree that she's been a mess for a while now, but her shaving her head is not a big deal. The girl shaved her head, who cares? That's not the biggest of the weird things she's done lately. The media is making it seem like she cut her arm off or something. The chick just felt like a drastic haircut!

I've heard a lot of things about the hair. I think the official word was "she was going through something and it was her "cleansing" ritual"

Other stories have her freaking out and shaving it because KFed threatened to have her hair tested for drugs.

She is messed up, for sure. It's kind of tragic to watch...
